The menu is done!!! The menu is done!!!! Planning the meals is half the battle. I feel an incredible ease once I have the menu prepared. I really don’t like leaving it for Sunday mornings, it just stresses me out. So for the last few weeks I’ve ben trying to get it done on Fridays or Saturdays. It makes Sunday mornings that much more enjoyable.
So for this week I consulted one of my favorite cook books – “The Best of Clean Eating”. Actually, the CLEAN EATING is my favorite foodie magazine and when I found out that there was a cook book, I knew I had to have it. So far we are doing recipes page by page and they all look mouthwatering.
SUNDAY: Cauliflower and chickpea gratin (we never got to make that last week and we have all the ingredients)
MONDAY: Spanakopita and Greek Salad
TUESDAY: Chicken parmesan with wheat pasta
WEDNESDAY: Shrimp + spinach + mushroom barley
THURSDAY: Dinning Divas
