Weekly Menu Plan

Last week’s meal plan looked good on paper (or on a screen). In reality, only two of my intended dinners were actually made. As much as I like to have a plan – it certainly helps with grocery shopping, sometimes the taste buds just don’t agree with what’s on the menu, so I compromise and meals get moved around. But I am hoping to get back on track this week. Here’s how the week is looking on paper (ergh…screen):

Sunday: Broccoli cheese bites

Monday: Meatless Monday – Mushroom Pizza

Tuesday: Girls’ Night out

Wednesday: Pork cutlets with sauteed peppers and beans

Thursday: Chicken orzo skillet

Friday: Leftovers

Saturday: Hummus crusted chicken and mash potatoes and steamed broccoli

Kiki and kept very busy on Sunday – we had places to be , people to see, so dinner was quick. Since broccoli is her favorite at the moment, I quickly put together broccoli cheese bites. Needless to say she LOVED it!!!

Perfect little dinner or lunch when in a pinch and you want your kid to gets some protein and veggies. Since Kiki seems to be a semi-vegetarian (by choice), this is perfect for her. 

Broccoli Cheese Bites

Ingredients:

1 cup of steamed broccoli florets

1 cup of shard cheddar cheese

1 cup of bread crumbs

2 eggs

salt and pepper

Directions:

Mix all the ingredients together in a large bowl.
With your hands, form small patties and lay on a parchment lined baking sheet.Let cool and enjoy!

Bake at 375F for 25 minutes, turning the patties after the first 15 minutes.

    we do something very similar with zucchinis and make them into fritters. She LOVES them and they're great to get her some protein. I use parmesan instead of cheddar for the zucchini ones.
