Good morning and happy Monday to you!! May swept through my life and left me in a bit of a daze. So much of a daze I didn’t even realize July is next week…where exactly did June go??? I’ve been in a desperate need of quiet, routine, normalcy, and this was my first weekend of quiet, but fun.
It was very much needed.
With my recent increase in business travel and late nights with work obligations, I could tell that my little lady needed my attention….I needed the time to give it to her.
And so that is what I did.
I have yet to find “balance” in this new gig called single working mom
but i am discovering that weekends like this go a very long way in helping me navigate the new waters.
I hope you had a fun weekend, here is a peek at what were up to!
We started off the weekend celebrating the first day of summer with some frozen yogurt. Kiki was only interested in playing with spoons, ice-cream not so much.
Our Saturday morning ritual of play time at the gym – the look of pure happiness. What more can you ask for then this smile!?!
Brunch with little friends – starting them early on brunch etiquettes.
Brunch with big friends – the supermom T prepared an incredible spread. I still don’t know how she does it? She just always has it all together…I think it’s time for me to pick up the tips and get my “domestic” life together. In a mean time, I am posting a recipe to the best baked sausages I have ever had.
We started off Sunday with a most refreshing walk/run on the beach. The sound of waves is so soothing…waves, sun, and sand is all I need. What was supposed to be a short run, ended up being half a day at the beach – Kiki and I could definitely get used to this.
Naturally, after the beach, we needed to cool off with some ice-cream, so we made our own. I think we have a Little Faux Foodie in the making. It was not just ice-cream, but banana peanut butter chocolate chip ice-cream. I highly recommend this little concoction – cut up banana and freeze them for 30-minutes, once frozen, throw them in the mixer along with some milk, a scoop of peanut butter and some chocolate chips and put everything back in the freezer for 30 minutes and voila healthy version of ice-cream…which Kiki was still unsure off, but enjoyed making!
And we played, and played, and played some more… Nothing more relaxing and enjoyable than smiling Kiki!
Of course what would weekend at home be with no baking… with the abundance of strawberries, I made strawberry cornmeal muffins. Yum!

Baked Sausages with Grapes
1 cup of grapes (seedless) red or green or both 1 package of chicken apple sausage 4 links (aidells sold at Costco)Olive oil 2 to 3 tablespoonsDirections:Preheat oven to 500Brush pan with a tbsp of olive oil (or pour 1 tbsp on pan and use a paper towel to spread it out)Cut sausage on bias into small piecesTake grapes off stem Place grapes and sausage on greased baking sheet. Drizzle rest of olive oil on the grapes and sausage. Use clean hands to mix and coat. Bake at 500 for 12 min. Turn once, bake for another 6 min or so until golden brown. Serve and Enjoy!
