Vegetarian for a day

A few weeks ago, I was reading the Runner’s World magazine and they had a great article about fueling your body for marathon training. It suggested that a person should introduce at least two vegetarian meals a week during the training period. With carnivores in our house, this seemed like such unattainable goal. But I realized tonight that with chef’s frequent travels, this will be a perfect opportunity to be a vegetarian for a night. You might have guessed it, the chef is out of town and I am on my own for dinner tonight. I have been thinking about dinner all day long. I wanted to make sure that I ate at home, used as many ingredients as possible, and went with a vegetarian option. I am on a mission to clean out the fridge and the pantry before I go food shopping again. We have plenty of loose items in the fridge/pantry but not enough to make dinner for two, so tonight seemed like the perfect night to be creative.I would like to introduce to you, a homemade veggie burger sandwich on a whole wheat bun, with avocado, roasted red pepper hummus, a slice of emmentaler cheese, sprouts, baby spinach and a small slice of yellow red pepper – now isn’t this yummy and delicious. Ah, the chef would be so proud of me. Breakfast of course was my favorite, a green monster followed by a banana for a morning snack. Lunch was a continuation of a vegetarian option with some wheat NAAN Indian inspired bread, one slice of cheese, baby spinach and red peppers. I couldn’t help myself, but I had some chips and strawberry chobanni with granola…sorry, no pictures of breakfast and lunch, but I have to say I am feeling AMAZING.I don’t know if it’s mental or what, but I feel lighter already. Lately the meat has just been “sitting” heavy. So perhaps the one or two vegetarian days a week will make a difference…time will tell. So my friends, I am off to get my beauty sleepy and proud that I survived “cooking” the first night while the chef is out of town…

    I also save my veggie meals for nights when my bartender hubby-2be is working. His dinner is not complete w/o the meat…
