Nothing says summer more than refreshing salad and a glass of wine. But what makes the summer salad special is the abundance of summer fruits like melons and peaches. I have to admit but to me summer doesn’t really start until July. And to celebrate “my” beginning of summer I prepared a plate of sweet and savory salad.
My summer salad was inspired by none than the trusted “Cooking Light” magazine. It’s my go-to reference for whatever I am looking for. It’s like the magazine can read my mind and it always has the right recipes – exactly the things I am hungry for!
And just like tonight, I saw this recipe and I knew I had to try it. What I like about CL recipes is that they are healthy, light, but most of all simple. Rarely does the recipe call for ingredients that I already don’t have on hand. What I liked the most is the contrast of salty cheese and prosciutto with sweet melons and crunchy herbs. And in addition to being so yummy, it was so beautiful looking with great pops of color! Yum, yum, yum!
Truly a perfectly refreshing salad for a summer hot night paired with a glass of chilled white wine. Yup, summer perfection!
