You are probably wondering what’s with the radio silence over here…well, life has been busy, good busy, satisfying busy, fulfilling busy…
Not sure what happened, but I read something that completely changed everything for me…
“I no longer need to hold onto what is not serving me. I am releasing the heavy burdens I carry to allow room for good into my life.”
It brought back the good parts of old me, happy me, the me that has decided to let go of the past, and not look back, but enjoy the now and look forward to tomorrow.
The new/old me is back to reading the foodie blogs and tonight I felt inspired. Even though I started really late on dinner tonight, I was determined to make something good. It feels like a lifetime since the last time I made something.
Tonight I made a very simple meal and played with flavors. I pan seared tilapia, and for the side dish, I left the comfort zone and experimented with curry powder and garam masala.
The side dish I made was the Mama Pea’s Cracklin’ Cauliflower, which was a great hit; and I will be making it again.
Easy, peasy and delicious!
