As I type this, I can barely keep my eyes open, but I have to tell you about tonight’s delicious dinner. I had grand plans of going to the gym for 30 minutes and than an hour of yoga, but I didn’t have energy to get off the couch, not alone to actually do something. I am exhausted. How do SAHMs do it????
Oh well, there is always tomorrow.
So back to dinner. Tonight’s menu was actually planned for tomorrow night. Since it was raining, the chef didn’t want to stand in the rain and grill, so he swapped the meals – don’t want to cause any confusion in case you were following our weekly menu.
Tonight’s dinner was inspired by one my favorite bloggers – Kath. I [read: the chef] rarely actually make any of her dinners as she eats way too clean and earthy for the Faux Foodie, but tonight’s dinner was a winner. It was 100% chef approved – you know what that means, right?! You will be seeing this meal on our menu again, real soon.
This was my first time having soba buckwheat noodles. They were a little chewy, with a bit of an aftertaste. But the peanut sauce made the noodles incredibly delicious. I was so enamored by the sauce that I barely noticed the veggies. Perhaps, there could have been more peppers and broccoli.
I asked the chef, and he said it took about an hour to make – chop and cook. From what I can say, it was worth every second as it was truly delicious. It can certainly be categorized under – easy, quick, tasty and healthy.

- 2oz ground turkey
- 1/4 red bell pepper
- 1/4 green bell pepper
- 1 celery, thin chop
- 2 carrots, peeled into ribbons
- 1 small head of broccoli
- 1/2C frozen peas
- buckwheat soba noodles
- Sauteed turkey, remove from pan
- Sauteed veggies, adding peas towards the end. Use soy sauce instead of salt for seasoning
- Combine everything and top with sauce and soy nuts
- Combine 1T peanut butter
- ~1T soy sauce
- dash of apple cider vinegar
- 1t brown sugar
