I am obsessed with Women’s Health magazine recipes this week. While de-cluttering and browsing through some old magazines, I found another amazing recipe that made for a delicious, savory, rich and high-protein dinner.
I’ve been making a conscious effort to eat more veggies everyday. I’ve been snacking on baby carrots and peppers during the day and some type of veggies at dinner time are a MUST. So tonight, I asked the chef to use a whole bag of spinach – we all know spinach cooks down… Did you know spinach has super powers – it fights health enemies [cancer, heart disease, stroke, obesity, osteoporosis], loaded with vitamins and it slows down the aging… Do I need to convince you any more why you should be eating spinach…all the time!!!!
Anywho, not sure who was a star of tonight’s dinner, but it was awesome! I went not only for seconds, but thirds. Needless to say, I do not have enough to pack to take with me tomorrow for lunch. It was certainly rich with all the cheese, pesto and walnuts, but so yummy. Do I need to remind you I went for thirds!?!
Savory Seafood Pasta [source]
2 oz multigrain penne
12 to 14 medium precooked peeled shrimp
2 Tbsp crumbled Gorgonzola parmesan or goat cheese, or whatever you have on hand
3 c chopped baby spinach
1 tomato, chopped
2 Tbsp chopped walnuts
3 Tbsp ready-made pesto
Cook pasta according to package directions; drain and transfer to a large bowl. Add shrimp, cheese, spinach, tomato, walnuts, and pesto, stirring well to help wilt the spinach and distribute the pesto.
