Not so flexible

I am not sure why I bothered to make the menu this week!!! Urgh, we are yet to make anything from it. It’s sad and frustrating at the same time. Sad, because I try very hard to put together a very balanced meal plan – healthy and easy to make. But frustrating because life gets in a way of plans and things change, including our menu. I take so much pride in putting it all together, but at the same time I need to learn to be flexible.
So tonight instead of having this, we had baked chicken + brown rice + mixed salad.

I know it sounds a little boring compared to what we originally planned, but it was really good. I was a little afraid of the brown rice, but to my surprise, it was good, very good. 
I think it helped that the chef added some slivered almonds and mozzarella cheese:) Cheese makes everything better.

The chicken was seasoned with olive oil and vegeta and baked for 40 min on 400F. I only had a 1/2 piece since it was really really really thick. In case you didn’t get it, it was really thick 😉

And perhaps one of the best parts of dinner – veggies. The starchy and protein heavy dinner needed some balance and greens. What better than all the greens in our fridge seasoned with salt, pepper, olive oil and balsamic vinegar – my favorite dressing combo.
After dinner I was reading some blogs, and as always checked out this blog and was struck by the balance of protein, carbs and veggies on this plate!!! I wish I could be that balanced. I am amazed with all the meals that she makes. I am actually jealous!!!! If you are looking to be healthier, eating more local food and using everything and anything that you have on hand, you must check out her blog. I guess when you are a registered dietitian and recipe developer, these things come to you naturally.
I am off to spend some quality time with my Google Reader. I have a lot to catch up on – 200+ blogs….I think I am having difficulty adjusting to the new format though….
