Happy Thanksgiving! (I know – a day late, but these days I am lucky if I get the day right)
Thanksgiving has passed, which means the holidays are officially upon us. Yes, the most wonderful time of the year is upon us. I have to admit I get very emotional thinking about holidays this year.
All week I tried really hard to come up with a list of things I am thankful for, and somehow it felt like I was writing a thesis on human evolution because I came up with nothing. As you can imagine I know nothing of human evolution…. I know life is not all that bad – there are many people out there that have it much worst than me. But it shouldn’t be this hard to see the beauty of every day. So I’ve decided to start every day with affirmations of things that I am thankful/grateful for.
Today I am grateful for:
1. Play time in the park
2. Rustic apple pies
3. Friends that become family and open their homes in toughest of times
4. Hallmark channel holiday movies
5. Sister-in-laws (or I guess ex-sister in laws…but I refuse to call them that as they will always be present in my life) for sharing their black friday shopping adventures as if I were there
6. MY BABY for loving me unconditionally
Kiki and I were invited to spend Thanksgiving at my friend’s house and I couldn’t be more thankful to her and her family for opening their home to us and welcoming us as if we were family. It was such a lovely day filled with kids and dogs running around, fantastic food, good wine and wonderful company. I won’t lie to you, I wish the circumstances were different, but life is as is and I need to learn to accept it.
I read this on Facebook this morning “We must let go of the life we have planned, so as to accept the one that is waiting for us.” ~Joseph Campbell it left me in tears….and then I had some apple pie.
I asked my host if I can bring anything to thanksgiving dinner, and she said “oh apple pie”. OK, no problem I said. I rushed to the store, bought a store-made apple pie, and 5 granny smith apples. I was determined to attempt a home made pie. I immediately pulled up a recipe that I booked marked ages ago, but just never had enough courage to make it.
Making a new recipe for a thanksgiving dinner might have not been the best idea, hence the store bought apple pie. If all goes wrong, I still had the back up. To my surprise, things didn’t go wrong, and I nailed it. OK, I might be exaggerating a lit, but it was delicious. So delicious that I had another piece before I went to bed and again some for breakfast today.
This picture does no justice to the taste of this apple pie. It was truly scrumptious – sweet, tangy, and flaky. Everything an apple pie should be. And it took me about 15 minutes to make and that’s with Kiki hanging around the kitchen. Let’s just say I will be making it again, real soon.

Rustic Apple Pie
[slightly adapted from here]
- 5 Granny Smith apples, peeled and sliced
- 1/2 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- Juice of 1/2 lemon
- 1 recipe Perfect Pie Crust, recipe follows – or store bought pie crust
- 6 tablespoons butter – two
Preheat the oven to 375 degrees F.
In large bowl, stir together the apples, brown sugar, granulated sugar, flour, salt and lemon juice. Set aside and see how long you can keep from sneaking a slice of apple.
Place half the apple mixture on one crust and the other half on the other crust. Fold over the edges of each crust so that it covers 2 to 3 inches of the apple mixture. No need to be artistic – the more rustic the better. Dot the tops of the pies with chunks of the butter.
Bake until the filling is golden and bubbly, 30 to 40 minutes. If the crust appears to brown too quickly, cover the edges with aluminium foil for the remaining baking time.
Allow to cool slightly, then slice into wedges with a pizza cutter.
