It was one of those days where nothing in particular happened, but I was in a blah mood. Everything bothered me, and most of all my own mood irritated me. I got nothing accomplished or nothing of importance. My TO-DO list was already a mile long. And of course, now I am stressing out even more.
Oh well, it was just one of those days and now I need to move on. Tomorrow is a new day, a chance for a new beginning, new accomplishments, new crossed items on my TO-DO list.
One thing that I did manage to enjoy was tonight’s dinner. A complete opposite from yesterday, today we had a grilled marinated steak with a new side dish (new to us). A glass of wine gave it a nice finishing touch.
The steak was grilled to perfection – soft, with crunchy top, juicy and sweet. I actually thought the marinade included some honey, but the chef said he forgot to “throw” it in.
The side dish was very refreshing – perfect for a summer night. I have to say I am really liking eating my rice cold. What’s even better, there is so much left over, my lunch for tomorrow is ready.
1 cup jasmine rice
coarse salt and ground pepper
3 medium carrots, shredded
1/2 cup chopped fresh parsley
1/4 small red onion, diced small
1 tbsp rice vinegar
1 tsp sugar
olive oil, soy sauce, salt and pepper, Worcestershire Sauce, vegeta, dry basil leaves
In a medium saucepan, bring rice and 1 1/2 cups water to a boil over high. Stir, cover, and reduce heat to low. Cook rice 15 minutes, remove from heat, and let stand covered, 5 minutes.
Meanwhile, grill the marinated steak 5 minutes per side. Transfer to a cutting board, tent with foil, and let rest 5 minutes.
Transfer rice to a large bowl. Add carrots, parsley, onion, vinegar, and sugar. Season with salt and pepper and toss to combine. Thinly slice steak against the grain and serve with rice.
