Green with Envy

I was clueless as to what to have for lunch. The fridge and pantry are out of the usual items, so my first thought was – there is nothing to eat. But after a few minutes of staring at all the ingredients, I put together a very green lunch. Aren’t you just green with envy?!? It was really not on purpose. Avocado, green pepper, hummus and spinach pancakes on a wheat sandwich thin – YUM!!! It would have been great to have some sriracha or pepper jack cheese, but there is always next time!
