Green Goddess Rice

I am in love…those cheeks, that smile….those two make my heart melt…
It’s no secret that I love everything about food except cooking. But lately my obsession with the Food Network has reached new levels. It’s on 24-7 on all three of the TVs – living room, bedroom and my office… just in case so I don’t miss anything. One of my favorite shows is the “5 Ingredients Mix” with Claire Robinson. I pretty much like all of her foods, but the best thing is that all her recipes are no more than 5 ingredients (hence the name LOL;) – perfect for our quick dinners and the chef’s liking of of recipes of few ingredients.

So the other afternoon, as I was passing by, I heard Claire talk about the “Green Goddess” and I knew I had to try it no matter what it was. Once i looked up the recipe it was perfect for a quick dinner for the Faux Foodie Casa, and it just happens that we had all the ingredients on hand. Along the green goddess rice, the chef marinated some chicken in mojo dressing and grilled it. 
It was an early dinner, something very unusual for us, but it worked. I actually might like eating dinners earlier. SO back to the green goddess – it was tangy, citrusy and creamy. Adding a little bit of avocado, basil and olive oil to jasmine rice makes a boring rice such a delicious side dish. If you are looking for a way to spicy up your side dishes – this is your recipe! 
Can you believe this weekend is over – I feel like I just started my friday night and suddenly it’s already Sunday night and I am getting ready for another week. Even though this weekend flew by, I got tons and tons of things done – I got plenty of rest, quality family time, ME time, plenty of laundry, cleaning and organizing – dare I say – I am ready for the next week. On to the meal planning for the upcoming week…

“Green Goddess Rice” 

Ingredients:

  • 1 1/2 cups basmati rice
  • Kosher salt
  • 1 small avocado, peeled, pitted, and coarsely chopped
  • 1 cup packed fresh basil leaves
  • 1 lemon, juiced
  • 3 tablespoons extra-virgin olive oil
  • 1/4 cup water
  • Freshly ground black pepper

Directions:Bring the rice, 3 cups water, and a pinch of salt to a boil in a medium saucepan over medium heat. Reduce the heat to a gentlesimmer, stir, cover, and cook until water is completely absorbed, 15 to 18 minutes. Remove from heat and let stand, covered, for 10 minutes.Meanwhile, put the avocado, basil, lemon juice, oil, and 1/4 cup water in the jar of a blender and puree; season generously with salt and pepper. Add more water and puree until the mixture is the consistency of sour cream.Fluff the rice with a fork and gently fold the green dressing into the warm rice. Taste and add more salt and pepper, if necessary. Serve immediately.

    Wow! Congrats on the commercial! My husband is a Creative Director so I know what a huge accomplishment that is!!! The rice sounds delish! must try! Hope you are doing well and we still have not gotten together 🙁 I will try to go to Bally's today when hubby gets home.
