Chicken Parm, the Clean Eating style

Back when I was pregnant I craved Chicken Parmesan all the time – I think it was my comfort food. If I could, I would have eaten it all the time, and luckily the chef found a way to satisfy my craving the healthy way.

Well nothing has changed, I’ve been craving it ever since I saw the recipe in the “The Best of Clean Eating” cookbook. Luckily we had all the ingredients on hand, so it was easy to add this to our weekly menu plan.

The best part of this dinner was the chicken. The way he did it was so delicious – chicken breasted coated in an egg and panko bread crumbs baked in the oven for 20 min at 400F and then for another 10 min with Parmesan cheese and tomato sauce.


I have to say, I am not sure what I was thinking when I was planning our meals this week, but all the sauces have been with chunky tomato, and that is my least favorite sauce.  Yikes…. it never has been. I think it reminds me of the tomato sauce that my mom used to make from scratch every fall. The smell of cooked tomatoes would linger in the house for weeks, or at least it felt like that and it’s just something I never liked. Still don’t.

Today has been emotionally draining, but the good news is the sous-chef passed her oncologist visit with flying colors!!!! YEAH!!!!  the downside of the visit, she is a bit overweight, so we have to watch her diet, but other than that everything looks great. it’s not even 9pm, but I am beat – waiting around for results and doctors’ appointments will do this to you…


This is what we did after the sous-chef’s doctor’s appointment – rolling around on the floor and loving it. This is happiness!!!!
