When I came home today I spent almost two hours reading with Kiki. Reading with Kiki really means looking at every single book she owns over and over again. She used to be able to sit and me read to her, but she no longer has patience for that and likes to go her own speed [aka, skip pages and just go to the pages she likes].

“Mommy, let’s read this one again!” And so we did for two hours! When the chef arrived home, I snuck out and went for a run. I have not ran without a stroller for almost 2 years. I almost did not know what to do with my arms and kind of missed my little co-runner. It was a nice and easy 2.5 mile run. It felt really good to be out there, but I could feel the lack of running has taken a toll on my body – my knees were hurting, my ankles were “heavy”. But I will be back out there – I am thinking 1/2 marathon is in my future….wanna join me in Amelia Island on January 19th?
Tonight the chef made one of my favorite summer meals – grilled steak with triple bean avocado corn salad. This salad is such an epitome of summer gatherings. It was such a juicy, citrusy and refreshing salad. It perfectly complemented the grilled steak. Even though the chef marinated the steak for almost 24 hours, it was still a bit tough and chewy, not that it stopped me from polishing off my plate.
The steak marinade included soy sauce, Worcestershire, honey, garlic, salt and olive oil – simple, but tasty.
Not only do I love the taste of this salad, but the vibrant colors are just so beautiful. How couldn’t it be with combination of pinto, black and red beans, grilled corn, avocado, cherry tomatoes, grilled onion, jalapeno pepper, cilantro, lime juice, salt and olive oil. The only challenging thing about this salad is that it’s not so easy to make ahead of time, but the grilled vegetables are totally worth it – they bring out all the flavor. The recipe is set for 12 servings – so there is plenty leftovers for tomorrow.
I am trying to call it a night, but unfortunately the Olympics are just too good tonight – swimming and gymnastics….the sad part is I already know how it all ends, but I can’t not watch…. Are you watching? What’s your favorite sport?
