One of my dreams while I was pregnant was that one day I will be able to share my love for baking with Kiki. And today we baked together for the first time. I wish I had a way with my camera to capture it, but I will certainly remember it forever. It was also because tonight I baked with one hand and held Kiki in the other. Don’t ask me what the kitchen looked like after it was all done…but it was so much fun. I think she loved using the mixer and seeing all the ingredients come together and kneeling the dough. She laughed so hard when I let her touch it. The little sparkle in her eye was all I needed to make this day a little better after the news.
I had some extra buttermilk in the fridge that needed to be used, so of course my first thought was – I need some scones in my life. I absolutely love these scones. It’s a rather easy and quick recipe that satisfies my sweet tooth. I am afraid Kiki didn’t have any…I am just not ready to give her the chocolate yet. So instead she had some peach, I think it might be the last peach of the season.
After all the baking, Kiki went to bed and I returned to the kitchen and did some more playing. Tonight’ dinner inspiration came from October’s Cooking Light magazine, my always go-to for quick and healthy dinners.
Tonight’s theme was definitely about quick and easy… 20 minutes, and dinner was served. I have to say I am huge fan of skillet dinners where only there is one dish to clean. I made a few changes to the original recipe, like omitting the chunky chopped tomatoes. But otherwise I really liked it. The red crushed pepper gives the chicken a nice spicy kick to it, and it is well balanced with the feta cheese.
