An apple a day keeps a doctor away....

It may be a cliche, but once fall rolls around, I'm all about the apples.  Apple pie?  Bring it on. Apple tart? I must have it. Apple crumble? Please feed me. Applesauce? Kiki is all over it for breakfast, lunch and dinner.  At brunch last week, I ate the most delicious apple cake I've ever tasted. As a matter of fact, I had two slices, but it wasn't enough to satisfy my taste for apples. 


So to satisfy the urge for apples, Kiki and I went to a farmer's market this weekend and picked up a whole basket of apples determined to make something "appley". But considering I've literally only made two pies in my entire life, I was a bit nervous what to do with a basket full of apples. But I felt inspired, and put my big girl pants, get over the fear of pie-making and put the 20+ apples to good use.


After all, haven't we always been told that an apple a day keeps the doctor away? 

If you are looking for a very quick, easy dessert that is also impressive, look no further than freezer section of your grocery store, and I am talking about the frozen sheets of ready-made puff pastry. Apples at their simplest are really at their finest. This apple tart is so easy to make, smells amazing while it bakes and tastes delicious too! Serve it plain as is, or maybe with vanilla ice-cream. Yummy!

Easy Apple Tart Recipe

Ingredients:
  • 2 red apples, thinly sliced
  • 2 tsp brown sugar
  • 1 tsp cinnamon
  • 4 tbsp butter, melted
  • 1 sheet ready-prepared puff pastry
  • 1 egg, lightly beaten
Directions:
Preheat oven to 390ºF. Place the apple, sugar, cinnamon and butter in a small bowl and mix to combine. Cut the pastry into 4 equal squares and score the edges to create a border. Layer with the apple mixture and brush with the egg. Place on a baking tray lined with non-stick baking paper and cook for 10–15 minutes or until golden and puffed. Serve plain or with vanilla ice-cream! Enjoy!
