Even though I had made a menu plan for last week, I barely cooked anything. Thank God for Rosa (Kiki's nanny) as I don't know what I would do without her. She took care of Kiki and me all week long, as she always does and then there was Thanksgiving with friends, so we survived. But I need to get back on track with cooking, so I looked through my recipes, and picked a few for this week. I don't really have an appetite right now, but I tried to come up with a few ideas that Kiki will eat and that are easy and quick to make. I was also looking for recipes that are also easy to reheat and make delicious leftovers. I am hoping I will do most of my food prep today since Kiki is with her dad. Hoping this vicious cold goes away soon too and my appetite returns.
++ Chicken Marsala with mashed potatoes and steamed broccoli
++ Hummus crusted chicken
++ Santa Fe Casserole
++ Pesto pasta with chicken sausage and roasted brussel sprouts
++ Lemon orzo mixed veggies salad
++ Mediterranean succotash with tomato basil chicken sausage
++ Mini BBQ cheddar meatloaf and roasted veggies
Come back this week and join us in good eats...you will enjoy it!
Q: What are you making this week? Are you done with all of your Thanksgiving leftovers?

Thanks for linking up! You have some delicious sounding dinners planned. I am lacking motivation lately with the craziness of the holidays. We haven't made pesto in months... I might have to add that next week!
ReplyDeleteNot many leftovers in our house this year. Your menu sounds so good!
