Phew, I survived today. It's been a crazy day of many hats. Yup, you are probably thinking "what in the world is she talking about?" I am not even sure where to begin with today and things that I have done. But all I can say, I am finally sitting down and relaxing with a cup of coffee and feeling content.
My day started super, super early. Kiki woke up early (5ish while still very dark outside) and her, the Sous-Chef and I cuddled under the blankets until 7:30am - one could say, we slept in - yippee! Snuggling with my baby girl is the best thing in the world.
And from there on, the day just got really crazy. My many hats of a day included - personal shopper, driver, gardner, photographer, employee, boss, mom, daughter, friend, chef and baker. Phew, I am tired. I might sound as if I am complaining about my day, but in reality, these are my favorite days. Days packed with activities and things I enjoy doing, some new, some old, some challenging, some ordinary, and some quite extraordinary.
But now that all those hats are off, I am going to tell you a little bit about my dinner. I picked a meal without really reading the directions carefully and boy did I pay for it. I used 5 pots and pans. I burned a few things. Cooked entirely too much pasta. And for a meal with only a few key ingredients - meatballs, pasta, mushrooms, spinach and cheese, it took me way too long to get it on my plate.

Non the less, once I did get it on my plate, I was a bit disappointed, and it wasn't the recipe, but the mistakes I made along the way. My meatballs were bland and not salty enough. I cooked too much pasta in relationship to everything else. And finally I used pecorino cheese that just wasn't good - perhaps it's been in my fridge for too long. The verdict is still out - will I attempt to make it again or not?

What's even more interesting is that looking back at my archives, I see that I had this meal for dinner not so long ago and somehow I had no recollection of it tonight or when I was meal planning. I can't even remember what it tasted it like the first time around. Did I like it? I guess it doesn't matter today, because today I was the chef I and I put my spin on it. Maybe I will give it another try, until I get it right. After all, I don't give up so easily.

Pasta with Spinach and Meatballs

- Ingredients
- Meatballs
- 12oz Pasta
- 12 oz mushrooms, quartered
- 1 tsp thyme
2 tbspbutterI used a bit of olive oil- 5 oz baby spinach
- 1/2 cup grated pecorino
- salt and pepper
- Cook 12 oz. pasta, reserving 1/4 cup of the cooking water. Cook 12 oz. quartered mushrooms and 1 teaspoon chopped thyme in olive oil in a large skillet until tender, 8-10 minutes on medium heat. Toss with the pasta, meatballs, baby spinach, cheese and reserved cooking water. Season with salt and pepper.
