I know it's been awhile since I posted a weekly menu but it's been awhile since we had somewhat of a normal schedule so meals have fallen to the sideways. Life is still not back to normal {wait, what is normal these days}, but I am determined to get a few things right this week and our meals will be one of them.
Our pantry is full of staples, perhaps one too many boxes of pasta, so I officially proclaim this week a Faux Foodie Pasta week. I did our grocery shopping and all I had to do was pick up veggies, fruit and a few dairy items - love shopping trips like this. Especially if I shop for veggies and fruit at Stiles, the indoor fresh market ...you know what that means - goodies for under $20 - yipee!!!!
Sunday: Tijuana Flats {what can I say, the chef didn't feel like cooking}
Monday: Ricotta stuffed shells
Tuesday: Pesto Pasta with Chicken Sausage & Roasted Brussels Sprouts Recipe
Thursday: Black bean burger and kale chips
Friday: leftovers...
