I've been making a conscious effort to eat more veggies everyday. I've been snacking on baby carrots and peppers during the day and some type of veggies at dinner time are a MUST. So tonight, I asked the chef to use a whole bag of spinach - we all know spinach cooks down... Did you know spinach has super powers - it fights health enemies [cancer, heart disease, stroke, obesity, osteoporosis], loaded with vitamins and it slows down the aging... Do I need to convince you any more why you should be eating spinach...all the time!!!!
Savory Seafood Pasta [source]
INGREDIENTS:
2 oz multigrain penne
12 to 14 medium precooked peeled shrimp
2 Tbsp crumbled Gorgonzola
3 c chopped baby spinach
1 tomato, chopped
2 Tbsp chopped walnuts
3 Tbsp ready-made pesto
DIRECTIONS:
Cook pasta according to package directions; drain and transfer to a large bowl. Add shrimp, cheese, spinach, tomato, walnuts, and pesto, stirring well to help wilt the spinach and distribute the pesto.
Makes 2 servings. Per serving: 360 cal, 19 g fat (5 g sat), 26 g carbs, 390 mg sodium, 5 g fiber, 22 g protein
