I've been making a conscious effort to eat more veggies everyday. I've been snacking on baby carrots and peppers during the day and some type of veggies at dinner time are a MUST. So tonight, I asked the chef to use a whole bag of spinach - we all know spinach cooks down... Did you know spinach has super powers - it fights health enemies [cancer, heart disease, stroke, obesity, osteoporosis], loaded with vitamins and it slows down the aging... Do I need to convince you any more why you should be eating spinach...all the time!!!!
Anywho, not sure who was a star of tonight's dinner, but it was awesome! I went not only for seconds, but thirds. Needless to say, I do not have enough to pack to take with me tomorrow for lunch. It was certainly rich with all the cheese, pesto and walnuts, but so yummy. Do I need to remind you I went for thirds!?!
