Real Simple Challenge: Meatless Monday


I am always on the look out for new dinner ideas. So when I read about the Real Simple challenge, I knew this one was for me. You want to know how this works - check it out here. I am on the mission to collect as many points as possible. I really hope to learn something, actually a lot from this challenge - God knows, I need help in the kitchen. I wonder if one of the lessons is how to boil water;)

Since today is Monday, we honored the Meatless Monday. Right before my trip to the Healthy Living Summit, I got the "Peas and Thank You" book, but I haven't had a chance to read it yet, so I was solely relying on the few vegetarian recipes from magazines.

"Every Day with Rachel Ray" magazine to the rescue with "Take 5". It was a perfect recipe - quick with 5 simple ingredients. Delicious!!! How could it not be perfect - it has all of my favorite ingredients - orzo pasta, mushrooms and parmesan - yum!


This is definitely a meal that can go meatless, or if you add some shrimp or chicken, it would be great.


INGREDIENTS
1 lb orzo pasta
3/4 cup toasted pine nuts
3/4 cup chopped flat-leaf parsley
juice of 1 lemon + lemon zest
2 6oz packages sliced mushrooms
grated parmesan cheese
2 tbsp olive oil

DIRECTIONS:
In a large pot of boiling, salted water, cook the orzo until al dente; drain and return to the pot. Stir in the pines nuts, parsley, lemon juice, lemon peel and 2 tablespoons extra virgin olive oil; season with salt and pepper. in a skillet, heat 1/4 cup olive oil over high heat until rippling. Add the mushrooms and cook, stirring occasionally, until browned, about 7 minutes. Divide the orzo among plates and top with the mushrooms.
